This is a complète from Crêperie Cluny in Paris. It’s a buckwheat crêpe with ham and cheese with a fried egg on top. The egg, you will note, has a bit of crispy edge, which you know I like. The ham is flavorful but not tough or stringy or fatty. I don’t know what kind of cheese they use, but it’s melty and a bit salty and has some nice cheesy flavor without being funky. Most importantly the crêpe itself has a slightly crispy texture and nutty buckwheat flavor.
I think Andi has taken me to this crêperie every time she has brought me to Paris. I’m happy to be back.
